REBULA

Rebula is of medium-strong yellow colour. The wine has a discreet smell, with a distinctive smell of tropical fruit. In the mouth, the wine is dry and contains appropriate acidity. The vine is harmonious, of a medium-strong character with medium-long after taste.

PINOT GRIGIO

Pinot Gris is of light yellow colour. It has a discrete smell, with a distinctive smell of lemon peel and baked almonds. In the mouth the wine is dry and has a pleasant acidity. The vine is of a strong character with a medium-long after taste.

Type of soil: The soil consists of deep alluvial layers.

MERLOT

Colors of Merlot resemble intense granite stone. The scent reminds of forrest fruits with a slight barrique tone. Elegant tannins make the taste smoothly dry. The wine feels semi-strong in character, harmonious and leaves long aftertaste.

Vinification: Grapes are macerated for 10 days in containers made of stainless steel, at the same time alcohol fermentation is taking place. The vine is matured with yeast, 50% in the containers of stainless steel and 50% in used barrique barrels, for 10 months.

CABERNET SAUVIGNON

Cabernet Sauvignon is of medium-strong ruby and garnet colour. It has the discrete smell of forest fruit with gentle butter tones, which complement the barrique tone. In the mouth, the wine is dry, harmonious, with ripe tannins and medium-long after taste.

CAROLINA REBULA

Carolina Rebula is yellow and gold colour. It smells fresh with a fairly developed smell of yellow fruit. In the mouth the wine is dry, tasty, with a distinctive character and an aroma of citrus and field flowers . It has a full, fine taste. The wine is mature but has a promising future.

Variety: Rebula

Geographical origin: The winegrowing district of Goriška brda is characterised by a hilly relief and a mild Sub-Mediterranean climate.

Type of soil: Marl.

Vineyards: Tested vineyards, between 30 and 40 years of age, grown under the system of Single Guyot. Planting density is 5 500 grape vines per hectare.

Harvesting: The grapes are picked twice. Vineyards which are about 30 years old are harvested in the last days of September. Older vineyards are harvested in the middle of October when the grapes are too ripe and are characterised by a noble mould Botrytis.

Vinification: The grapes of first harvesting are cold macerated for 18 hours and then pressed. Alcohol fermentation is managed at a controlled temperature; such wine has a lower content of alcohol but is more fresh and fruity. The wine is matured in receptacles of stainless steel for 10 months. Alcohol fermentation of the wine from second harvesting is conducted in small, new and used French barrels made of Allier oak.

BELA CAROLINA – WHITE CAROLINA

White Carolina is of gold and yellow colour. The smell is expressive, with a distinct smell of coconut, caramel and over ripe fruit. In the mouth the wine is dry, dense, with appropriate levels of acidity. Some discrete aromas of ripening and yeast are recognized. A very compact and harmonious wine, offering a long after taste.

Varieties: Chardonnay 60%, Rebula 35%, Sauvignon 5%

Type of soil: Marl.

Vineyards: Terraced vineyards, between 25 and 35 years of age, grown under the system of Single Guyot. Planting density is 5 000 grape vines per hectare.

Harvesting: Manual harvesting in the second half of September and beginning of October.

Vinification: Chilled grapes are macerated for 48 hours then pressed at low pressure. Alcohol fermentation is at a controlled temperature. 20% of Chardonnay is matured in oak barrels. After a year, the wines are decanted and joined.

CAROLINA RED

Red Carolina is of medium-strong garnet red colour. It has an elegant smell; it is matured, with a distinctive smell of cherries and cherry jam. In the mouth the wine is dry, tasty, with fine ripe tannins. The wine is strong, with the flavour of pepper, exotic spices, and chocolate, maturing in the wood. A very complex vine with long after taste and long life.

Varieties: Cabernet Sauvignon 75%, Merlot 15%, Cabernet Franc 5%

Vineyards: Terraced vineyards, over 30 years of age, grown under the system of Single Guyot. Planting density is 5 500 grape vines per hectare.

Harvesting: Manual picking of grapes in the beginning of October.

Vinification: The grapes are macerated for a month. The wine matures for 24 months in 225L barrels at a constant temperature and humidity. We use 50% Slavonian oak, 47% French Allier and 3% French Troncaise oak.

CAROLINA NOIR

Carolina noir is of medium strong garnet red colour. It has an elegant, intensive smell, is matured and has a distinctive smell of tobacco, coffee and prunes. In the mouth the wine is dry, tasty, with fine ripe tannins. The taste is complex, strong, with nice sweet tannins, which shows a long life expectancy.

Vinification: The grapes are macerated for a month. The wine matures for 24 moths in 225L barrels at a constant temperature and humidity. We use 70% of French Allier and 30% of Slavonian oak.

CAROLINA SELECT

Carolina SELECT is of medium strong garnet red colour. It has an elegant smell, is matured and has a distinctive smell of ripe black currant. In the mouth the wine is dry, tasty, with fine ripe tannins. The taste is complex, strong, creamy, with nice sweet tannins, which shows a long life expectancy. A very complex wine with a long after taste and a long life.

Varieties: Merlot 92%, Cabarnet Sauvignon 8%

Geographical origin: The winegrowing district of Goriška brda is characterised by a hilly reflief and a mild sub-Mediterranean climate.

Type of soil: Marl and sandstone.

Vineyards: In the heart of terraced vineyards named Južno there is the oldest parts of the vineyards, over 70 years old. The growth and fertility in this vineyard is slow, which enables late harvesting.

Harvesting: Manual picking of grapes in the first half of October.

Vinification: The grapes are macerated for a month. The wine matures for 24 moths in 225L barrels at a constant temperature and humidity. We use 25% of Slavonian oak, 65% of French Allier and 10% of French Troncaise oak.

MOSAIC BRUT

Sparkling wine MOSAIC is yellow with fine and continuous sparkling. It smells of fruit, in particular dry pears and bread crust. The bubbles are gentle and stress the freshness of this sparkling wine. At the same time, in the background you can recognise its mineralogy and fullness of taste. The wine is harmonious with a long after taste

Varieties: Rebula 85 %, Pinot Blanc 15 %

Geographical origin: Wine region high Brda/Collio recognized by rolling hills with a typical Mediterranean climate. Vineyard locations : – Lazne, Južno, Trebunk, Fabrika

Type of soil: Marl.

Vineyards: Vineyards are 30 years old. The vine-growing system is Guyot. The density of vines is 6.500 per hectare.

Harvesting: Pinot Blanc is hand picked at the beginning of September and Rebula in the middle of September

Vinification: The grape juice is taken from the stalkless grapes, without pressing. Alcohol fermentation is conducted at low temperatures in containers made of stainless steel; prior the fermentation ends, a part of the wine is poured into the barrique barrels.

AGEING – Combination of ageing in steal tanks and ageing in oak barrels. After six months the wine is joined and filled into the bottles where secondary fermentation takes place. In two years a yeast autolysate is by hand removed from the sparkling wine and is filled with the same wine.

MOSAIC ROSE

Sparkling wine MOSAIC has a typical orange color. The sparkling wine is very elegant the nose with the aroma of wild strawberries and grapefruit. The concentrate and vertical taste continues also in the mouth. A pleasant acidity enhance the wines elegance and timeless. A wine with fresh character and long aftertaste.

Vineyards: Terraced vineyard, 25 - 35 years of age, grown under the system of Single Guyot. Planting density is 5 400 grape vines per hectare.

Harvesting: Hand picking grapes

Vinification: The grape is just decanted . Alcoholic fermentation takes place in inox tank with control of fermentation temperature. The wine is characterised with typical orange color and high aromatic concentration.

UVAIA

Uvaia has a typical orange color. The wine is very concentrated on the nose with the aroma of almonds and wild strawberries. The concentration continues also in the mouth. A pleasant acidity enhance the wines elegance and timeless. A wine with strong character and long aftertaste.

Harvesting: Hand picking grapes

Vinification: The grape is macerated from 4 to 6 days. Alcoholic fermentation with indigenous yeast takes place in special egg shaped wooden barrels. The shape of barrel allow the yeast to be all the time in suspension and in contact with the wine. With this method we get the effect of natural battonage. The wine is characterised with typical orange color and high aromatic concentration.

In 1847, Mihael and Carolina Jakončič gave new birth to their winery.
They planted their first compact vineyard in Kozana and with this deed, consciously or not, chose the paath for their winery. They wanted to expand the assortment of products as they felt that the winemaking of Goriška brda was becoming a profitable activity.

New roads and new railways were built, and new markets were being opened. At that time nobody suspected that vineyards would be attacked by phylloxera. Wars followed that pushed the family into difficult life conditions.

The monotonous buzz of a tractor somewhere in the vineyard is the only proof that modern technology may enter the world of traditional manual work, custom and knowledge passed on from one generation to another. Experiences from days gone past direct the impatience of the young and on our winery farm we are very proud that the children and parents together care for the vineyards, winemaking and marketing.
